Vegan Turkey Recipe

Use a ceramic pot with a lid and cooked it (thawed) at 325 for 45 minutes to an hour or longer for a browner finish.
Prepare homemade stuffing to nest it on in the pot.

Stuffing or Dressing

1/2 cup Earth Balance
2 T Olive Oil
1 cup celery sliced
1 onion chopped
2 cloves of garlic smashed and chopped
1-2 teaspoons of poultry seasoning
Saute (medium to low heat) everything until onions are soft and transparent (don’t burn) in a large fry pan
Add about 6 cups of your choice of cubed bread
Add enough cups of Not Chicken broth or Veggie Broth to moisten to your taste.
A little on the wet side is good for the oven cooking, as it will dry it out a bit.

Put stuffing in the pot for the oven as a base for the Turkey.

Vegan Turkey

Put a roughly cut onion, poultry seasoning, and broken stalks of celery that have been quickly sauteed together with Oil- into the Turkey cavity. Use room temp Earth balance to completely coat the Turkey top. Sprinkle on top salt, pepper, poultry seasoning, onion, and garlic powder. Nestle the Turkey on top of the stuffing with, hopefully, enough room around the sides of the Turkey, as well. So you have some moist under the Turkey and crunchy around.

Put it in the oven at 350 (metal) or 325 (ceramic) covered or lidded for 45 minutes.
Take the lid off for 15 – 30 more minutes until desired color and texture. You may occasionally rub some more Earth Balance for moisture and taste of the Turkey.

I used the Leahey Brand Golden Gravy as per the directions but feel free to kick the flavor up with some white wine!
